The scullery (wash up area)
The name scullery is mostly used on ships, people used the name wash up areas or pot wash for other kitchens.(the old process for cleaning pots and pans is the manual hand washing method.)

This process of hand washing wares usually takes hours of manual labor cleaning the items with
a sponge or bristle while standing over a sink. This process is usually in the restaurant
industry and is one of the least desirable positions due to its intense labor.

Today,  there is equipment to help ease the job load, dish washing machine, power scrubbers( this is a pot brush with an electric motor ). Taking into consideration the effort it takes to scrub pots and pan with baked-on food of grease.

At least one manufacturer has design these brushes to rotate on flexible power shafts and
scour pots and pans and utensils with minimal effort. One manufacturer makes a variety of brushes
and scrubbers that can be easily changed.

Equipment use in a kitchen today.
There are all kinds of kitchen equipment and gadgets to make life easier in all kitchen. Kitchen tools are exclusive items used in the kitchen like pans, broilers,cheese cutter ,griddle hotplates,ovens, cooking range,roasters,steamers, toasters.etc.
No restaurant is worth its salt can function without them. All these equipment comes in  different sizes and capabilities.

Refrigerators are inseparable to any kitchen, be it restaurant or home. These include blast freezers display cases, deep freezers, counter tops, walkin-chillers and walk-in freezers.
They help the staff to keep large qualities of perishable ingredients in storage for longer periods.

Small kitchen equipment
Cutting boards, mixing bowls, pizza servers etc increases the convenience of the restuarant staff.

The lunch area
This should be located in a convenient place so that staff would not have too far to go in case
the rain falls. It should be comfortable with tables and chairs in according to the staff employed.
Each person should have his or her locker that can be lock to store their bags. There should be male and female
compartments with bathrooms and mirrors in each compartment.
